Roasted Brussels Sprouts with Cranberries

1 lb Brussels sprouts, trimmed and halved

1 cup fresh cranberries (or frozen, thawed)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon maple syrup

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for a kick)

¼ cup chopped walnuts or pecans (optional)

¼ cup crumbled feta cheese or goat cheese (optional for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prep the Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, balsamic vinegar, maple syrup, garlic powder, salt, black pepper, and red pepper flakes (if using). Make sure all the sprouts are nicely coated.

      Add the Cranberries: Gently fold in the fresh cranberries, ensuring they are evenly distributed throughout the Brussels sprouts mix.

        Arrange on Baking Sheet: Spread the Brussels sprouts and cranberries out on the prepared baking sheet in a single layer. Avoid overcrowding to ensure they roast evenly.

          Roast in the Oven: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the Brussels sprouts are golden brown and crispy on the edges, and the cranberries are bursting.
