3 medium sweet potatoes, peeled and cut into thin rounds

3 tablespoons olive oil

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 jalapeño, thinly sliced (optional for heat)

1 ½ cups shredded cheese (cheddar, Monterey Jack, or vegan cheese)

¼ cup sliced green onions

½ cup fresh cilantro, chopped

Avocado crema or guacamole, for topping

Lime wedges, for serving

Instructions
 

Preheat and Prepare the Sweet Potatoes:

    Preheat your oven to 400°F (200°C). In a large bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, cumin, salt, and pepper until well coated.

      Roast the Sweet Potatoes:

        Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and tender.

          Layer the Nacho Ingredients:

            Once the sweet potatoes are done, remove them from the oven. Begin layering by placing half of the roasted sweet potatoes on a serving plate or wooden board, followed by half of the black beans, corn, cherry tomatoes, jalapeños (if using), and half of the cheese.

              Add More Layers:

                Repeat the layering process with the remaining sweet potatoes, black beans, corn, cherry tomatoes, jalapeños, and the remaining cheese.

                  Final Bake:

                    Place the assembled nacho tower back in the oven for an additional 5-10 minutes or until the cheese is melted and bubbly.
