1 pound cherry tomatoes, halved

10 ounces pasta (like fusilli or penne)

8 ounces fresh mozzarella balls, halved

1/4 cup extra virgin olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and freshly ground black pepper, to taste

1/2 cup fresh basil leaves, chopped

1 tablespoon balsamic glaze (optional, for drizzling)

Grated Parmesan cheese, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, red pepper flakes, salt, and black pepper. Spread them in a single layer and roast in the preheated oven for 20-25 minutes until caramelized and slightly shriveled.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain, reserving 1 cup of pasta water.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta with the roasted tomatoes (including all juices). Mix in the mozzarella balls and the remaining olive oil. If the mixture seems dry, add reserved pasta water a little at a time until you reach your desired consistency.

          Add Fresh Basil: Gently fold in the chopped basil, allowing it to mix through.

            Taste and Adjust: Season with additional salt and pepper if needed. Drizzle with balsamic glaze for added flavor before serving.

              Serve: Plate the pasta in serving bowls, sprinkle with grated Parmesan cheese, and enjoy warm!
