½ teaspoon black pepper

½ cup unsalted butter, chilled and cubed

1 cup sharp cheddar cheese, grated

1 small onion, finely chopped

2 tablespoons fresh chives, chopped (optional)

¾ cup whole milk

1 large egg, for egg wash

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

      Incorporate Butter: Add the chilled, cubed butter into the dry mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese and Onions: Fold in the grated cheddar cheese, finely chopped onion, and fresh chives (if using) until evenly distributed.

          Form the Dough: Pour in the milk and stir gently until the mixture starts to come together. Be careful not to overmix; the dough should be slightly sticky but manageable.

            Shape the Scones: Turn the dough out onto a floured surface and gently knead it a couple of times to bring it together. Pat it into a round disc about 1-inch thick. Cut the disc into 8 wedges, like a pizza.
