2 cups all-purpose flour

1 tablespoon sugar

1 tablespoon active dry yeast

1 teaspoon salt

3/4 cup warm milk (110°F or 43°C)

2 tablespoons unsalted butter, melted

1 large egg

1 medium onion, finely chopped

1 cup shredded cheese (cheddar or your favorite blend)

1 tablespoon olive oil

1 teaspoon dried thyme or oregano (optional)

1 egg (for egg wash)

Sesame or poppy seeds (for topping, optional)

Prepare the Dough: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make the Dough: In a large mixing bowl, whisk together the flour, salt, and dried herbs (if using). Add the melted butter, egg, and the frothy yeast mixture. Mix until a dough forms, then knead on a lightly floured surface for about 7-10 minutes until smooth and elastic.

      Let it Rise: Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place until it doubles in size, about 1 hour.

        Prepare the Filling: While the dough rises, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Remove from heat and let cool. Once cooled, mix in the shredded cheese.

          Shape the Rolls: Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle (about 1/4-inch thick). Spread the cheese and onion filling evenly over the dough.

            Roll It Up: Starting from one long edge, roll the dough tightly into a log. Cut the log into 12 equal pieces and place them cut side up in a greased baking dish or on a baking sheet lined with parchment paper.

              Second Rise: Cover the rolls with a towel and let them rise for an additional 30 minutes.

                Prepare for Baking: Preheat your oven to 375°F (190°C). Beat an egg and brush it over the tops of the rolls. If desired, sprinkle with sesame or poppy seeds for an extra crunch.

                  Bake: Bake in the preheated oven for 20-25 minutes or until golden brown and the cheese is bubbling.
