Savory Chicken and Broccoli Rice Casserole

2 cups cooked white or brown rice

2 cups cooked, shredded chicken (rotisserie chicken works great)

2 cups broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Broccoli: If using fresh broccoli, steam it for about 3-4 minutes until tender. If using frozen broccoli, microwave according to package instructions. Allow to cool slightly and chop into smaller pieces.

      Mix Base Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, and steamed broccoli.

        Create Sauce: In another bowl, whisk together the cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper until smooth.

          Combine Mixtures: Pour the sauce over the rice, chicken, and broccoli mixture. Add in 1 cup of shredded cheddar cheese and mix everything until well-coated.

            Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with cooking spray or butter. Pour the chicken and broccoli mixture into the dish, spreading it evenly.

              Add Toppings: If desired, sprinkle the top with additional shredded cheddar cheese and breadcrumbs for a crunchy topping.

                Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is bubbly and golden brown.
