6 large eggs

1 cup diced cooked ham

1 cup shredded cheddar cheese

1/2 cup milk

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil (for greasing the muffin tin)

Optional: fresh herbs (like parsley or chives) for garnish

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Muffin Tin: Grease a 12-cup muffin tin with olive oil to prevent the breakfast cups from sticking.

      Mix the Egg Base: In a large mixing bowl, crack the eggs and add the milk. Whisk them together until well combined.

        Add Ingredients: Stir in the diced ham, shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, black pepper, and salt. Mix until all ingredients are evenly distributed.

          Fill the Muffin Cups: Pour the egg mixture evenly into each of the muffin cups, filling them about 3/4 full to allow for expansion while baking.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are lightly golden.

              Cool and Serve: Remove the muffin tin from the oven and allow the breakfast cups to cool for 5 minutes. Use a small spatula or knife to gently lift each breakfast cup out of the tin.
