1 cup pumpkin puree (canned or homemade)

6 large eggs

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh sage leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Aromatics: In a large, oven-proof skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and fresh sage, cooking for an additional 1-2 minutes until fragrant.

      Mix the Eggs: In a large mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper. Add the pumpkin puree and Parmesan cheese, mixing until well combined.
