2 medium zucchinis, grated

1 tsp salt (for zucchini draining)

1/2 cup all-purpose flour (or chickpea flour for a gluten-free option)

1/2 cup crumbled feta cheese

2 large eggs

1/4 cup grated Parmesan cheese

2 green onions, finely chopped

1 clove garlic, minced

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

3-4 tbsp olive oil (for frying)

Lemon wedges (for serving)

Instructions
 

Prepare Zucchini: Grate the zucchinis and place them in a colander. Sprinkle with 1 tsp of salt and let them sit for about 15 minutes to drain excess moisture. After 15 minutes, use a clean kitchen towel or cheesecloth to squeeze out any remaining water.

    Mix the Batter: In a large bowl, combine the drained zucchini, flour, feta cheese, eggs, Parmesan cheese, green onions, garlic, black pepper, cayenne pepper (if using), and dill. Mix well until all ingredients are thoroughly incorporated into a thick batter.

      Heat the Oil: In a large skillet, heat 2-3 tablespoons of olive oil over medium heat.

        Fry Fritters: Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture and flatten it slightly with a spatula in the pan. Repeat, being careful not to overcrowd the pan. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. You can adjust the heat as necessary to prevent burning.

          Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil. If needed, add more olive oil to the skillet between batches.
