School Snack Tacos with Chicken Chili

1 lb (450g) cooked shredded chicken

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup salsa (mild or spicy, as per preference)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or a taco blend)

8 small flour or corn tortillas

Optional toppings: diced avocado, chopped cilantro, sour cream, lime wedges, and jalapeƱos

Instructions
 

Prepare the Chicken Chili: In a medium saucepan over medium heat, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, salt, and pepper. Stir well to combine and allow to simmer for about 10 minutes, or until heated through. Stir occasionally to prevent sticking.

    Warm the Tortillas: While the chicken chili simmers, heat the tortillas. You can either warm them in a dry skillet over medium heat for about 30 seconds on each side, or pop them in the microwave for 15 seconds wrapped in a damp paper towel to keep them moist.

      Assemble the Tacos: Once the chicken chili is ready and the tortillas are warmed, set up a taco station. Take a tortilla and fill it generously with the chicken chili mixture (about 2-3 tablespoons per tortilla).

        Add Cheese: Sprinkle shredded cheese on top of the hot chili to allow it to melt slightly over the filling.
