Ingredients

For the Fish:

1 pound white fish fillets (like cod or tilapia)

1 cup buttermilk

1 cup panko breadcrumbs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1 tablespoon olive oil

For the Fresh Slaw:

2 cups cabbage, thinly sliced (green or a mix of green and purple)

1 cup carrots, shredded

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons apple cider vinegar

1 tablespoon honey (or agave for a vegan option)

Salt and pepper, to taste

For Serving:

Corn or flour tortillas (8 small)

Lime wedges

Optional toppings: avocado slices, salsa, or hot sauce

Instructions

Marinate the Fish: In a bowl, pour the buttermilk over the fish fillets and let them marinate for about 20-30 minutes in the refrigerator.

Prepare the Slaw: While the fish is marinating, combine the shredded cabbage, shredded carrots, and chopped cilantro in a large bowl. In a small bowl, whisk together the lime juice, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss well. Set aside to let the flavors meld.

Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Coat the Fish: In a shallow dish, mix the panko breadcrumbs, paprika, garlic powder, cumin, salt, and pepper. After marinating, remove the fish from the buttermilk and gently coat each fillet with the breadcrumb mixture.

Air Fry the Fish: Lightly brush the air fryer basket with olive oil. Place the coated fish fillets in the basket in a single layer, making sure not to overcrowd. Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.

Warm Tortillas: Meanwhile, heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap in foil and place in the air fryer for the last few minutes of fish cooking.

Assemble Tacos: Once the fish is cooked, remove it from the air fryer and let it rest for a minute. Break the fish into bite-sized pieces, then place a few pieces of fish onto each tortilla. Top with the fresh slaw and any additional toppings you desire.

Serve: Serve immediately with lime wedges on the side for squeezing over the tacos.
