2 medium zucchinis, grated

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup chocolate chips (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons vegetable oil

1 teaspoon vanilla extract

4 flour tortillas

Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out any excess moisture. Set aside.

    Make the Cookie Dough: In a mixing bowl, combine the grated zucchini, flour, oats, brown sugar, baking soda, baking powder, cinnamon, and salt. Mix well.

      Add Wet Ingredients: In a separate bowl, whisk together the vegetable oil, vanilla extract, and any optional ingredients like chocolate chips and walnuts. Stir this mixture into the dry ingredients until fully combined.

        Heat the Pan: Preheat a non-stick skillet or frying pan over medium heat.

          Assemble the Quesadillas: Place a tortilla in the skillet. Spread a portion (about 1/4 of the mixture) of the cookie dough evenly over half of the tortilla. Fold the other half over it.

            Cook the Quesadilla: Cook for about 3-4 minutes, or until the bottom is golden brown. Flip carefully and cook for an additional 3-4 minutes on the other side until golden and crisp.

              Repeat: Remove the cooked quesadilla from the skillet and repeat with the remaining tortillas and cookie dough mixture.

                Serve: Once all quesadillas are cooked, let them cool slightly, then slice into wedges. Serve warm, optionally dusted with powdered sugar or with a scoop of vanilla ice cream.
