Slow Cooker Cheesy Chicken Chili

Ingredients
  

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 large onion, diced

3 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup chicken broth

8 oz cream cheese, cubed

1 cup shredded cheddar cheese (plus more for topping)

Optional toppings: sour cream, sliced green onions, fresh cilantro, avocado slices

Instructions
 

Begin by placing the boneless, skinless chicken breasts at the bottom of your slow cooker.

    Add the drained black beans, kidney beans, diced tomatoes (with their juices), corn, diced onion, and minced garlic on top of the chicken.

      Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper. Pour the chicken broth over the top to ensure everything is well combined.

        Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.

          Once the cooking time is up, carefully remove the chicken from the slow cooker and shred it using two forks.

            Return the shredded chicken back into the slow cooker, and add the cubed cream cheese. Stir until the cream cheese is melted and fully incorporated.

              Sprinkle the shredded cheddar cheese over the top. Mix well to allow the cheese to melt completely into the chili.

                Serve hot, garnishing with additional cheddar cheese, sour cream, sliced green onions, fresh cilantro, and avocado slices if desired.
