1 medium onion, diced

3 cloves garlic, minced

4 cups canned whole tomatoes (about two 28-ounce cans)

2 cups vegetable broth or chicken broth

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 cup heavy cream or coconut cream for dairy-free

1/4 cup fresh basil leaves, chopped (for garnish)

Sauté the Aromatics: In a skillet over medium heat, add the olive oil. Once hot, add the diced onions and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant. This step helps to elevate the flavor of the soup.

    Transfer to Slow Cooker: Carefully transfer the onion and garlic mixture to the slow cooker.
