Slow Cooker Lentil Soup

1 cup dried green or brown lentils, rinsed

1 medium onion, diced

2 medium carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups vegetable broth (or chicken broth)

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale

1 tablespoon olive oil

Juice of 1 lemon (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables have softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Combine Ingredients in Slow Cooker: Transfer the sautéed vegetables into the slow cooker. Add the rinsed lentils, diced tomatoes (with their juices), vegetable broth, ground cumin, dried thyme, paprika, bay leaf, and a pinch of salt and pepper. Stir to combine all the ingredients well.

      Cook the Soup: Cover the slow cooker with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender.

        Add Greens: About 15-20 minutes before serving, stir in the fresh spinach or kale. Let it wilt in the heat of the soup for that vibrant color and nutritious boost.

          Adjust Seasoning: Taste the soup before serving and adjust the seasoning with more salt, pepper, or spices as needed. Remove the bay leaf.
