Slow Cooker Sweet Corn Chili

2 cups sweet corn kernels (fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 jalapeño, seeds removed and diced (optional for heat)

2 cups vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh cilantro for garnish

Avocado slices (for serving, optional)

Lime wedges (for serving, optional)

Instructions
 

Prepare the Vegetables: Start by dicing the onion, bell pepper, and jalapeño (if using). Mince the garlic and set aside.

    Combine Ingredients: In the slow cooker, combine the sweet corn, black beans, kidney beans, diced tomatoes (with their juice), diced onion, garlic, bell pepper, jalapeño, and vegetable broth.

      Season the Chili: Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir gently to mix everything together.

        Cook: Cover the slow cooker with its lid and set to cook on low for 6-8 hours or on high for 3-4 hours. The longer the cook time, the more the flavors will develop.

          Check Consistency: About 30 minutes before serving, check the consistency of the chili. If it’s too thick, stir in a little extra vegetable broth. If it’s too thin, you can leave the lid off for the last half hour to help it thicken.

            Serve: Once done, give the chili a good stir. Taste and adjust seasoning if necessary. Ladle into bowls and top with fresh cilantro, slices of avocado, and a squeeze of lime juice for an extra zing.
