1/2 cup cooked quinoa

1/2 cup breadcrumbs (or gluten-free alternative)

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, finely chopped (seeds removed for less heat)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/4 tsp salt

1/4 tsp black pepper

1 large avocado, sliced

1 large tomato, diced

1/4 cup fresh cilantro, chopped

Lettuce leaves (such as romaine or butter lettuce) for wrapping

Sriracha or hot sauce (for drizzling, optional)

Instructions
 

Prepare the Black Bean Mixture: In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Cook the Vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the onion, garlic, and jalapeño for about 3-4 minutes, until soft and fragrant.

      Combine Ingredients: Add the sautéed vegetables to the mashed black beans along with cooked quinoa, breadcrumbs, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well until everything is combined.

        Form Patties: Shape the mixture into burger-sized patties (approximately 4-6 patties depending on the desired size). If the mixture is too crumbly, add a splash of water or a bit more cooked quinoa.
