Spicy Buffalo Turkey Meatballs

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

2 cloves garlic, minced

1 large egg

2 tablespoons hot sauce (like Frank’s RedHot)

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil (for frying)

1/4 cup additional hot sauce (for tossing)

2 tablespoons unsalted butter, melted (for tossing)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

    Mix the Meatball Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, chopped green onions, minced garlic, egg, 2 tablespoons of hot sauce, onion powder, garlic powder, smoked paprika, black pepper, and salt. Mix gently until everything is well incorporated. Avoid overmixing to keep the meatballs tender.

      Form the Meatballs: Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter, placing them on the prepared baking sheet as you go.

        Bake the Meatballs: Once all the meatballs are shaped, bake them in the preheated oven for 20-25 minutes or until they are cooked through and slightly browned. The internal temperature should reach 165°F (74°C).

          Prepare the Buffalo Sauce: While the meatballs are baking, in a small bowl, mix the remaining 1/4 cup of hot sauce with melted butter. This will be your spicy buffalo sauce.

            Toss the Meatballs: Once the meatballs are done, remove them from the oven and let them cool for a few minutes. Place the meatballs in a large bowl, pour the buffalo sauce over them, and gently toss until they are evenly coated.
