Spicy Cajun Sausage and Rice Bake

1 lb (450g) andouille sausage, sliced

1 cup long-grain white rice, rinsed

1 medium onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 cups chicken broth

1 can (14.5 oz) diced tomatoes (with juice)

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, and corn)

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1 cup shredded cheddar cheese

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté Sausage: In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced andouille sausage and sauté for about 5-7 minutes, or until browned. Remove the sausage and set aside.

      Cook Vegetables: In the same skillet, add the diced onion and green bell pepper. Sauté for about 3-4 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Stir in the rinsed rice, cooked sausage, chicken broth, diced tomatoes (with their juice), Cajun seasoning, smoked paprika, and cayenne pepper. Season with salt and pepper to taste. Mix well to combine all ingredients.

          Add Frozen Vegetables: Fold in the frozen mixed vegetables, ensuring they're evenly distributed throughout the mixture.

            Bake in Oven: Bring the skillet mixture to a boil, then cover with a lid (or aluminum foil). Transfer to the preheated oven and bake for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.

              Optional Cheese Topping: If you’re adding cheese, sprinkle the shredded cheddar cheese on top of the bake during the last 5 minutes of cooking. Return to the oven uncovered until the cheese is melted and bubbly.

                Garnish and Serve: Once the bake is finished, remove it from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
