Spicy Cucumber & Hatch Slaw

3 medium cucumbers, thinly sliced

2 large Hatch green chiles, roasted, peeled, and diced (or substitute with jalapeños for more heat)

1 small red onion, thinly sliced

1 cup shredded carrots

1/2 cup fresh cilantro, chopped

1/4 cup lime juice (about 2-3 limes)

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Optional: 1 tablespoon sesame seeds for garnish

Instructions
 

Prep the Vegetables: Start by thoroughly washing the cucumbers and slicing them thinly using a mandoline or a sharp knife. Place them in a large mixing bowl.

    Roast the Chiles: If using fresh Hatch green chiles, roast them over an open flame or under a broiler until the skins are charred. Place them in a sealed bag for about 10-15 minutes to steam, then peel off the skins, remove seeds, and dice. Add the diced chiles to the bowl with cucumbers.

      Mix in the Other Vegetables: Add the thinly sliced red onion, shredded carrots, and chopped cilantro to the bowl. Toss everything together to combine.

        Make the Dressing: In a separate small bowl, whisk together lime juice, apple cider vinegar, honey (or agave), chili powder, smoked paprika, and a pinch of salt and pepper until well blended.

          Combine & Toss: Pour the dressing over the cucumber and vegetable mixture. Toss gently to ensure that all the vegetables are evenly coated with the dressing.

            Chill: Cover the slaw and refrigerate for at least 30 minutes to allow the flavors to meld and develop. It’s best if let chill for about an hour.
