Ingredients

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (adjust based on desired heat)

1/4 teaspoon sea salt

1 cup fresh pineapple chunks

1 tablespoon lime juice

2 tablespoons honey (optional, for drizzling)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Pineapple: Start by marinating the fresh pineapple chunks in lime juice. This will enhance their flavor and add a bit of tanginess. Set aside for about 15 minutes.

Make the Ice Cream Base: In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, ground cinnamon, cayenne pepper, and sea salt. Whisk until the sugar is fully dissolved and all ingredients are well incorporated.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it’s completely chilled.

Blend the Pineapple: After chilling, take the marinated pineapple chunks and blend them in a food processor or blender until smooth. You can leave a few small pieces for texture if desired.

Combine Pineapple with Ice Cream Base: Stir the blended pineapple into the chilled ice cream base until evenly mixed.

Churn the Ice Cream: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes) until it reaches a soft-serve consistency.

Freeze to Firm Up: Transfer the churned ice cream into a lidded container. If you like, drizzle honey on top before sealing. Freeze for an additional 4 hours or until firm.

Serve: Scoop the spicy ice cream into bowls or cones. Garnish with fresh mint leaves and an extra sprinkle of cayenne pepper if desired for added spice.

Enjoy your creation: Indulge in this unique blend of sweet, spicy, and tropical flavors!
