1 cup fresh figs, quartered

1/2 cup balsamic vinegar

2 tablespoons honey

4 ounces goat cheese, softened

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

4 slices of rustic bread (sourdough or baguette)

Arugula or mixed greens for garnish (optional)

Prepare the Balsamic Reduction: In a small saucepan, combine the balsamic vinegar and honey. Bring to a gentle simmer over medium heat and reduce the heat to low. Allow to simmer for about 10-15 minutes, stirring occasionally, until the mixture thickens and coats the back of a spoon. Remove from heat and let cool slightly.

    Sauté the Figs: In a medium skillet, heat the olive oil over medium heat. Add the quartered figs and sauté for about 2-3 minutes until soft and slightly caramelized. Sprinkle with salt, pepper, and thyme, and mix well. Remove from heat and set aside.

      Toast the Bread: While the figs are cooking, preheat your oven to 400°F (200°C). Place the slices of bread on a baking sheet and lightly brush both sides with olive oil. Toast in the oven for about 8-10 minutes or until golden and crisp.
