1 cup firm tofu, pressed and cubed

2 cups fresh strawberries, hulled and sliced

4 cups mixed greens (spinach, arugula, and baby kale)

1/4 cup sliced almonds, toasted

1/4 cup feta cheese, crumbled (optional)

2 tablespoons balsamic glaze

2 tablespoons olive oil

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon lemon juice

Salt and pepper to taste

Fresh mint leaves for garnish

Instructions
 

Prepare the Tofu: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, introduce the cubed tofu. Sauté until all sides are golden brown (about 8-10 minutes). Season with a little salt and pepper. Remove from heat and allow to cool slightly.

    Prepare the Dressing: In a small bowl, whisk together balsamic glaze, remaining olive oil, honey or maple syrup, lemon juice, and a pinch of salt and pepper. Set aside.

      Assemble the Salad Base: In a large salad bowl or platter, layer the mixed greens evenly across the bottom.

        Add Strawberries and Tofu: Carefully arrange the sliced strawberries and sautéed tofu cubes over the layer of greens.
