6 mini sweet peppers (various colors)

1 cup cream cheese, softened

1/2 cup grated cheddar cheese

1/2 cup crumbled goat cheese

1/4 cup chopped cooked bacon (or prosciutto)

1/4 cup sliced olives (green or black)

1/4 cup chopped fresh herbs (basil, parsley, or chives)

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Optional: balsamic glaze for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the mini sweet peppers and carefully remove the seeds. Set aside.

      Make the Filling: In a mixing bowl, combine the softened cream cheese, grated cheddar cheese, crumbled goat cheese, chopped bacon, sliced olives, fresh herbs, garlic powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

        Stuff the Peppers: Using a small spoon or a pastry bag, fill each mini pepper generously with the cheese mixture.

          Bake: Place the stuffed peppers on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the tops are lightly golden.
