Ingredients

1 ½ cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 large egg

1/2 cup unsweetened applesauce

1/2 cup whole milk

1/4 cup melted butter (cooled)

1 teaspoon vanilla extract

1 large apple, peeled, cored, and finely chopped (Granny Smith or Honeycrisp work well)

1/4 cup walnuts or pecans, chopped (optional)

1 tablespoon raw sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Prepare Wet Ingredients: In a separate bowl, beat the egg lightly. Add applesauce, milk, melted butter, and vanilla extract to the egg. Mix until well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a rubber spatula until just combined. Be careful not to over-mix; a few lumps are okay.

Add Apples and Nuts: Gently fold in the chopped apple and walnuts or pecans (if using) until evenly distributed throughout the batter.

Fill Muffin Cups: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. If desired, sprinkle a pinch of raw sugar on top of each muffin for added crunch and sweetness.

Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Cool: Remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Serve and Enjoy: These muffins are delicious both warm and at room temperature. Enjoy them for breakfast, as a snack, or as a delightful treat any time of the day!
