2 ripe bananas, mashed

1 cup rolled oats

1/2 cup whole wheat flour

1/4 cup brown sugar

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/3 cup milk (dairy or non-dairy)

1/4 cup coconut oil, melted

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/3 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with non-stick spray.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Whisk together until well combined.

      Prepare Wet Ingredients: In another bowl, mix together the mashed bananas, honey (or maple syrup), applesauce, milk, melted coconut oil, and vanilla extract. Stir until everything is well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. Be careful not to overmix; some lumps are okay. If using, fold in the chopped nuts and chocolate chips.
