2 large chicken breasts, diced

1 tablespoon vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/3 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cup fresh cilantro leaves

4 large flour tortillas or wraps

Lime wedges, for serving

Marinate the Chicken: In a mixing bowl, combine the sweet chili sauce, soy sauce, rice vinegar, sesame oil, minced garlic, and ginger. Add the diced chicken, ensuring it's well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 7-10 minutes or until the chicken is fully cooked and no longer pink, stirring occasionally.

      Add Vegetables: Once the chicken is cooked, add the sliced red bell pepper and shredded carrots to the skillet. Sauté for an additional 4-5 minutes until the vegetables are tender-crisp.

        Season: Taste the mixture and adjust seasoning with salt and pepper as needed. Remove from heat and stir in the fresh cilantro.
