1 cup almond flour

1 cup shredded sweetened coconut

1/2 cup almond butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (for coating, optional)

Extra shredded coconut (for rolling)

Instructions
 

Mix the Base: In a large mixing bowl, combine the almond flour and shredded sweetened coconut. Mix until well combined.

    Add Wet Ingredients: Add the almond butter, honey (or maple syrup), vanilla extract, and sea salt to the dry mixture. Stir until the mixture is uniform and sticky.

      Form the Balls: With your hands, take small amounts of the mixture and roll them into balls about 1 inch in diameter. Place them on a parchment-lined baking sheet.

        Chill for Firmness: Once all the balls are formed, place the baking sheet in the fridge for about 30 minutes to firm them up.

          Coat with Chocolate (Optional): If you’re using chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval until fully melted. Dip each chilled coconut almond ball into the melted chocolate, allowing any excess to drip off. Place them back on the parchment-lined sheet.

            Roll in Coconut (Optional): If desired, roll the chocolate-coated balls in extra shredded coconut before returning them to the baking sheet.

              Final Chill: Place the baking sheet back in the fridge for another 15-20 minutes to set the chocolate.
