Sweet Potato and Sausage Breakfast Pizza

1 large sweet potato, peeled and thinly sliced

1 pound breakfast sausage (pork or turkey)

1 pre-made pizza crust (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

3 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh spinach leaves, for topping

Fresh herbs (such as parsley or chives), for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat as well.

    Prepare Sweet Potato: In a mixing bowl, combine the sliced sweet potatoes, 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.

      Sauté Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into crumbles as it cooks. Remove from heat and set aside.

        Roast Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 15-20 minutes, until tender and slightly crispy. Remove and set aside.

          Assemble Pizza: On your pizza crust, drizzle the remaining 1 tablespoon of olive oil. Evenly distribute the mozzarella cheese over the crust, followed by the roasted sweet potatoes and cooked sausage. Sprinkle feta cheese on top.

            Add Eggs: Create small wells in the toppings for the eggs. Crack each egg into the wells, being careful not to break the yolks.

              Bake the Pizza: Place the assembled pizza in the oven (or on the preheated pizza stone) and bake for 12-15 minutes, or until the egg whites are set, and the yolks are still slightly runny to your preference.
