2 medium-sized sweet potatoes

4 oz goat cheese, softened

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

¼ teaspoon cayenne pepper (optional, for a kick)

Salt and black pepper to taste

2 tablespoons chopped pecans (for garnish)

Fresh thyme sprigs (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into 1-inch cubes. Place the cubes in a large mixing bowl.

      Season Sweet Potatoes: Drizzle the olive oil over the sweet potato cubes. Add salt, black pepper, and cayenne pepper (if using). Toss well to coat all the pieces evenly.
