Sweet Potato Gnocchi with Sage Butter

Ingredients
  

2 large sweet potatoes (about 1 pound), baked

1 cup all-purpose flour (plus extra for dusting)

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

1 large egg, lightly beaten

6 tablespoons unsalted butter

10 fresh sage leaves

Freshly grated Parmesan cheese for serving

Salt and black pepper to taste

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Bake the sweet potatoes until fork-tender, about 45 minutes to 1 hour. Let them cool slightly, then scoop out the flesh and mash it in a large bowl.

        Make the Dough:

          - To the mashed sweet potato, add the salt, nutmeg, and the beaten egg. Mix until combined. Gradually fold in the flour, a little at a time, until a soft dough forms. Be careful not to overwork the dough, as it can make the gnocchi tough.

            Form the Gnocchi:

              - Dust your work surface with flour. Divide the dough into 4 equal portions. Roll each portion into a long rope about 1/2 inch in diameter. Cut the roll into 1-inch pieces to form the gnocchi. If desired, you can use a fork to create ridges on each piece for better texture.

                Cook the Gnocchi:

                  - Bring a large pot of salted water to a gentle boil. Add the gnocchi in batches (don’t overcrowd the pot) and cook until they float to the surface, about 2-3 minutes. Once they float, let them cook for an additional minute, then remove them with a slotted spoon and place them on a baking sheet.

                    Prepare the Sage Butter:

                      - In a large skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter is lightly browned and the sage is crispy, about 3-5 minutes. Be careful not to burn the butter.

                        Combine and Serve:

                          - Add the cooked gnocchi to the skillet with the sage butter. Gently toss to coat the gnocchi in the butter, seasoning with salt and black pepper to taste. Serve hot, topped with freshly grated Parmesan cheese.
