Tuna Skewers with Lemon Salsa

For the Tuna Skewers:

1 lb fresh tuna steak, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

Salt and pepper, to taste

8 wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

For the Lemon Salsa:

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 small red onion, finely chopped

1/4 cup fresh parsley, chopped

1 lemon (zested and juiced)

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

Instructions
 

Marinate the Tuna:

    - In a bowl, mix together the olive oil, soy sauce, honey, minced garlic, grated ginger, sesame oil, salt, and pepper.

      - Add the cubed tuna steak to the marinade and gently toss to coat. Allow it to marinate for at least 30 minutes in the refrigerator.

        Prepare the Lemon Salsa:

          - In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped parsley.

            - Add the lemon zest and juice, along with the extra virgin olive oil. Season with salt and pepper to taste. Toss everything together and set aside to let the flavors meld.

              Assemble the Skewers:

                - Preheat your grill or grill pan to medium-high heat.

                  - Thread marinated tuna cubes onto the skewers, leaving a little space between each cube for even cooking.
