Ingredients
  

1 large cucumber

8 slices of turkey breast (deli-style or roasted)

1 ripe avocado, mashed

1 cup fresh spinach leaves

1/4 cup feta cheese, crumbled

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Fresh dill or parsley for garnish (optional)

Instructions
 

Prepare the Cucumber: Wash the cucumber thoroughly. Using a vegetable peeler or a mandoline slicer, slice the cucumber into long, thin strips. Aim for about 1/8 inch thick to ensure they roll easily. Set aside.

    Make the Avocado Spread: In a medium bowl, combine the mashed avocado, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well combined.

      Assemble the Roll-Ups: Lay a cucumber strip on a clean cutting board. Spread a thin layer of the avocado mixture over the cucumber, leaving a small border at the edges. Place 1 slice of turkey on top of the avocado, followed by a few spinach leaves and a sprinkle of feta cheese.

        Roll It Up: Starting from one end of the cucumber strip, gently roll the cucumber around the turkey and toppings. The avocado will act as a glue to hold everything together. Repeat the process with the remaining cucumber strips.

          Serve: Arrange the roll-ups on a serving platter. Garnish with an extra sprinkle of feta cheese or fresh dill/parsley, if desired. Serve immediately or refrigerate for up to an hour before serving to keep them fresh.
