Turkey Skewers with Lime Salsa

For the Turkey Skewers:

1.5 lbs ground turkey

1/2 cup breadcrumbs (preferably panko)

1/4 cup finely chopped fresh cilantro

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

1 egg, lightly beaten

Skewers (soaked in water for 30 minutes if wooden)

For the Lime Salsa:

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1 jalapeño, seeded and finely diced (optional for heat)

1/4 cup fresh lime juice (about 2 limes)

Zest of 1 lime

1 avocado, diced

Salt and pepper to taste

1/4 cup chopped fresh cilantro

Instructions
 

Prepare the Turkey Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, cilantro, minced garlic, smoked paprika, cumin, salt, pepper, and the beaten egg. Mix everything until well combined.

    Shape the Skewers: Using your hands, take a handful of the turkey mixture and mold it into logs around the soaked skewers, ensuring they stick well to avoid falling off while grilling.

      Make the Lime Salsa: In a medium bowl, mix together the quartered cherry tomatoes, diced red onion, jalapeño (if using), lime juice, lime zest, and diced avocado. Season generously with salt and pepper, adding the chopped cilantro at the end. Toss gently to combine and set aside.

        Preheat the Grill: Heat your grill to medium-high. If you’re using a grill pan, preheat it over medium heat and lightly oil the surface.

          Grill the Skewers: Place the turkey skewers on the grill and cook them for about 5-6 minutes per side, or until they are well browned and the internal temperature reaches 165°F (74°C). Turn occasionally to ensure even cooking.

            Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the skewers hot, drizzled or accompanied by the fresh lime salsa on the side for dipping or drizzling.

              Garnish: Optionally, garnish with extra lime wedges and cilantro for added freshness.
