1 pre-made pizza dough (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (mix of colors for vibrancy)

1/2 cup mushrooms, finely chopped

1/2 cup cherry tomatoes, halved

1 tsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp crushed red pepper flakes (adjust to taste)

Salt and pepper to taste

1 egg, whisked (for egg wash)

Olive oil, for brushing

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's ready for baking.

    Prepare the Dough: Roll out the pizza dough on a lightly floured surface to about 1/4-inch thickness. Cut the dough into circles using a large cookie cutter or bowl (approximately 5 inches in diameter).

      Make the Filling: In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, chopped spinach, diced bell peppers, chopped mushrooms, halved cherry tomatoes, Italian seasoning, garlic powder, crushed red pepper flakes, salt, and pepper. Mix until thoroughly combined.

        Assemble the Pockets: Place about 2 tablespoons of filling in the center of each dough circle. Be careful not to overfill, as this will make sealing difficult.

          Seal the Pockets: Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal, then use a fork to crimp the edges for extra security.

            Prepare for Baking: Arrange the pockets on a baking sheet lined with parchment paper. Brush the tops with the whisked egg for a golden color and shiny finish. Optionally, drizzle a little olive oil on top for extra flavor.
