Ingredients

1 1/2 cups rolled oats

1 cup ripe bananas (about 2-3 medium bananas, mashed)

1/2 cup unsweetened almond milk (or milk of choice)

1/4 cup maple syrup or honey

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted (or vegetable oil)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped nuts (walnuts or pecans) for added crunch

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

Blend the Oats: In a blender or food processor, grind the rolled oats until they resemble a fine flour. This will give your muffins a great texture.

Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, maple syrup, applesauce, melted coconut oil, and vanilla extract. Stir until smooth.

Mix Dry Ingredients: In another bowl, whisk together the ground oats (oat flour), baking powder, baking soda, cinnamon, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!

Fold in Chocolate Chips and Nuts: Gently fold in the chocolate chips and, if using, the chopped nuts until evenly distributed throughout the batter.

Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. You can sprinkle a few extra chocolate chips on top for an appealing look.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Serve the muffins warm or at room temperature. These muffins are great as a quick breakfast, snack, or dessert!
