2 cups fresh watermelon, cubed

1 lb large shrimp, peeled and deveined

1 cup baby arugula or mixed greens

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1 avocado, diced

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon honey

2 tablespoons freshly squeezed lime juice

Salt and pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Shrimp:

    - In a medium bowl, toss the shrimp with olive oil, salt, and pepper.

      - Heat a non-stick skillet over medium heat and add the shrimp in a single layer.

        - Cook for 2-3 minutes on each side until pink and opaque. Remove from heat and let cool.

          Make the Dressing:

            - In a small bowl, whisk together honey, lime juice, salt, and pepper. Adjust sweetness and acidity to taste.

              Assemble the Salad Bowl:

                - In a large salad bowl, combine the watermelon, arugula, cucumber, red onion, and avocado.
