Zesty Lime Popsicles

Ingredients
  

1 cup freshly squeezed lime juice (about 4-5 limes)

1 cup coconut water

1/2 cup honey or agave syrup (adjust sweetness to taste)

Zest of 2 limes

A pinch of sea salt

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Lime Juice: Squeeze the limes until you have 1 cup of fresh lime juice. Strain it through a fine mesh sieve to remove any pulp or seeds.

    Mix Ingredients: In a mixing bowl, combine the freshly squeezed lime juice, coconut water, honey (or agave syrup), lime zest, and a pinch of sea salt. Stir well until the honey is fully dissolved and the mixture is evenly blended.

      Taste Test: Take a small taste of the mixture and adjust sweetness if necessary by adding more honey or agave syrup. Remember, the sweetness might mellow slightly once frozen.

        Fill the Molds: Pour the lime mixture into popsicle molds, leaving a small space at the top to allow for expansion when they freeze. If desired, add fresh mint leaves to each mold for an extra burst of flavor.

          Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered.

            Freeze: Carefully transfer the molds to the freezer and freeze for at least 4-6 hours, or until firmly set.

              Unmold and Enjoy: To release the popsicles, run warm water over the outside of the mold for a few seconds. Pull gently on the sticks to remove the popsicles. Serve immediately or store in an airtight container in the freezer for later enjoyment.
