1 can (6 oz) tuna in olive oil, drained

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped for heat

In a large mixing bowl, combine the drained tuna, diced avocado, cherry tomatoes, red onion, cucumber, and cilantro.

    In a small bowl, whisk together the lime juice, olive oil, Dijon mustard, salt, and pepper until thoroughly mixed.
