3 medium zucchinis, sliced into half-moons

2 cups fresh corn kernels (or frozen, thawed)

1 red bell pepper, diced

1 small red onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

3 tablespoons olive oil

1 cup cherry tomatoes, halved

½ cup crumbled feta cheese (optional)

Fresh basil leaves for garnish

Juice of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, corn kernels, diced red bell pepper, diced red onion, and minced garlic.

      Season the Veggies: Add in the smoked paprika, dried oregano, salt, black pepper, and red pepper flakes (if using). Drizzle the olive oil over the vegetables and toss everything together until the veggies are well-coated in the spices and oil.

        Spread on Sheet Pan: Pour the seasoned vegetable mixture onto the prepared sheet pan, spreading them out evenly to ensure they roast properly.

          Roast: Place the sheet pan in the preheated oven and roast for about 20-25 minutes, stirring halfway through. The vegetables should be tender and slightly caramelized.

            Add Tomatoes and Cheese: After 20-25 minutes, remove the sheet pan from the oven. Add the halved cherry tomatoes to the pan, stirring gently to combine. If desired, sprinkle the crumbled feta cheese over the top and return to the oven for an additional 5 minutes until the tomatoes are softened.

              Finish and Serve: Once done, take out the sheet pan and drizzle with fresh lemon juice. Garnish with fresh basil leaves before serving.
