Zucchini Fried Rice

2 medium zucchinis, grated or finely chopped

2 cups cooked rice (preferably day-old for better texture)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 eggs, lightly beaten

1 cup mixed vegetables (carrots, peas, bell peppers, etc.)

3 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper to taste

Optional: red pepper flakes for heat

Optional: chopped cilantro or parsley for garnish

Instructions
 

Prep the Zucchini: If using grated zucchini, place it in a clean kitchen towel and squeeze out excess moisture to avoid a watery fried rice. If using chopped zucchini, just set aside.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, stirring for about 30 seconds until fragrant.

        Add Zucchini and Vegetables: Incorporate the grated or chopped zucchini and mixed vegetables into the skillet. Stir-fry for about 3-4 minutes, until the zucchini has softened slightly but still retains some crunch.
