2 medium zucchinis, grated

1 cup all-purpose flour

1 large egg, beaten

1/4 cup grated Parmesan cheese

1/4 cup crumbled feta cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup fresh parsley, chopped

4 slices of your favorite bread (sourdough or multigrain recommended)

1 cup shredded mozzarella cheese

2 tablespoons butter

Olive oil for frying

Instructions
 

Prepare the Zucchini Fritters:

    - Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. This is crucial for crispy fritters.

      - In a large bowl, combine the drained zucchini, flour, beaten egg, Parmesan, feta, garlic powder, onion powder, salt, pepper, and parsley. Mix until well combined.

        Cook the Fritters:

          - Heat a non-stick skillet over medium heat and add a drizzle of olive oil.

            - Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly to form fritters. Cook for about 3-4 minutes on each side until golden brown and crispy. Remove and place them on a paper towel to drain excess oil. Repeat with the remaining mixture.

              Assemble the Sandwich:

                - On one slice of bread, layer a generous amount of shredded mozzarella cheese, followed by one or two zucchini fritters, and top off with another slice of mozzarella cheese.

                  - Place a second slice of bread on top to create a sandwich. Press down gently.

                    Grill the Sandwiches:

                      - In the same skillet (or a new one if preferred), melt 1 tablespoon of butter over medium heat. Carefully add the sandwich.

                        - Grill on one side until golden brown and the cheese starts to melt, about 3-4 minutes. Add the remaining tablespoon of butter to the skillet, flip the sandwich, and grill the other side until similarly golden and crispy.

                          Serve:

                            - Once both sides are crispy and the cheese has melted, remove the sandwich from the skillet. Cut it in half for easier handling and serve warm. Pair it with a side of marinara or a fresh salad!
