2 medium zucchinis, thinly sliced

4 slices of your favorite bread (sourdough works well)

1 cup shredded cheddar cheese (or a mix of mozzarella and Monterey Jack for extra gooeyness)

2 tablespoons cream cheese, softened

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon Italian seasoning (or fresh basil if available)

2 tablespoons olive oil or butter, for grilling

Salt and pepper, to taste

Instructions
 

Prepare the Zucchini:

    - Preheat your grill or griddle over medium heat.

      - Lightly sprinkle salt on the zucchini slices and let them sit for about 10 minutes. This will help release some moisture. After 10 minutes, pat them dry with a paper towel.

        Make the Spread:

          - In a bowl, mix the softened cream cheese, Dijon mustard, garlic powder, Italian seasoning, salt, and pepper until well combined.

            Assemble the Sandwich:

              - Spread the cream cheese mixture evenly on two slices of bread.

                - Layer half of the shredded cheese on top of the spread.

                  - Next, add a layer of zucchini slices, followed by the remaining cheese.

                    - Top with the other two slices of bread.

                      Grill the Sandwiches:

                        - Heat the olive oil or butter in the preheated grill.
