Zucchini Mac and Cheese

2 medium zucchinis, grated

2 cups elbow macaroni

2 tablespoons unsalted butter

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon mustard powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Boil the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Zucchini: While the pasta cooks, grate the zucchinis and sprinkle with a pinch of salt. Let them sit in a colander for about 10 minutes to release excess moisture. Afterward, squeeze out any additional water with a clean kitchen towel.

      Sauté Vegetables: In a large skillet over medium heat, melt the butter and olive oil. Add the chopped onion and sauté until translucent, about 3 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

        Make the Cheese Sauce: Lower the heat and stir in the grated zucchini. Cook for about 5 minutes until softened. Pour in the milk and bring to a gentle simmer, stirring frequently. Add the cheddar cheese, Parmesan cheese, mustard powder, smoked paprika, salt, and pepper. Stir until the cheese is melted and the mixture is smooth.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and mix until the pasta is well coated. Cook for an additional 2-3 minutes to heat through.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the creamy mac and cheese mixture into a greased baking dish.

              Top and Bake: In a small bowl, mix the breadcrumbs with a drizzle of olive oil, then spread evenly over the mac and cheese. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
