Ingredients
  

2 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup corn (fresh or canned)

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olives, sliced (optional)

For the dressing:

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup

Salt and pepper to taste

1/2 teaspoon dried oregano

Instructions
 

Prepare the Zucchini Noodles: Use a spiralizer to create long zucchini noodles. If you don't have a spiralizer, you can use a vegetable peeler to create ribbons, then chop them into bite-sized pieces. Place the noodles in a bowl and sprinkle lightly with salt; let them sit for about 10 minutes to soften. Drain excess moisture.

    Make the Dressing: In a small bowl or a jar with a lid, combine olive oil, apple cider vinegar, Dijon mustard, honey, salt, pepper, and dried oregano. Whisk or shake well until emulsified. Taste and adjust seasonings if necessary.

      Layer the Mason Jar: In a large mason jar or several smaller jars, layer the ingredients to keep them fresh:

        - Start with the dressing at the bottom (this prevents the noodles from getting soggy).

          - Next, add zucchini noodles.

            - Follow with diced cucumbers, cherry tomatoes, corn, diced red bell pepper, sliced red onion, and olives (if using).

              - Top with crumbled feta cheese and a sprinkle of fresh parsley.

                Seal and Store: Seal the jars with their lids. Store in the refrigerator for up to 5 days.
